Food Purchasing

Food purchasing is the process of selecting and buying food items from various retail outlets, farms, or open markets. It is not merely about handing over money for food; it involves careful planning, budgeting, choosing high-quality items, and understanding market trends. Effective food purchasing ensures that a household gets the best nutritional value for the money spent.

Food Preparation

Food preparation refers to the various activities carried out to make food ready for cooking or immediate consumption. This process includes washing, peeling, cutting, chopping, marinating, mixing, and applying heat (cooking). Proper preparation improves the taste, texture, digestibility, and appearance of food while helping to eliminate harmful organisms.

Food Safety

Food safety is a scientific discipline and practical approach that focuses on handling, preparing, and storing food in ways that prevent foodborne illnesses (food poisoning). It involves maintaining clean environments, preventing cross-contamination, cooking foods to safe temperatures, and storing ingredients under the correct conditions to prevent the growth of harmful bacteria, viruses, and fungi.

What to Consider When Purchasing Food

Before stepping into a market, a smart shopper must distinguish between perishable foods (which spoil quickly, like tomatoes, fresh fish, and milk) and non-perishable foods (which store well over long periods, like rice, beans, and flour). Planning a shopping list based on these categories prevents waste and saves money.

Risk Factors in Buying Food

When purchasing food, several risk factors can compromise the quality and safety of the food items. These include:

Unhygienic Market Environments: Buying food from areas with open drainage, hovering flies, accumulated refuse, or dirty display tables increases the risk of contamination by pathogens like Salmonella and E. coli.
Expired or Label-less Packaged Foods: Consuming packaged goods past their expiry date is dangerous. Additionally, buying products without clear labels (lacking manufacturer details, ingredient lists, or expiry dates) makes it difficult to verify their safety.
Damaged and Dented Canned Foods: Canned foods that are dented, swollen, rusted, or leaking should never be purchased. Dents can cause tiny, invisible cracks in the inner lining of the can, allowing harmful bacteria—specifically Clostridium botulinum, which causes deadly botulism—to grow.

Baking: Cooking food using dry, hot air inside an enclosed space called an oven.

Roasting: Cooking food over direct dry heat (such as hot coals) or in an oven, usually basting with fat or oil to prevent it from drying out.
- Examples: Roasted chicken, roasted plantain (boli), or roasted peanuts.
Grilling (or Broiling): Cooking food quickly under or over direct, intense radiant heat.
- Examples: Grilled fish, suya (skewered meat), or grilled steaks.

Frying Methods

Frying involves cooking food in hot oil or fat.

Shallow Frying: Cooking food in a small amount of oil in a shallow pan (like a frying pan). The food is turned over halfway through.
- Examples: Frying eggs, pancakes, or thin slices of meat.
Deep Frying: Submerging food completely in a deep pan of very hot oil. This creates a crispy exterior and cooks the inside quickly.

Food storage is the art and science of keeping food in good condition from the time of purchase or harvest until it is eaten. Proper storage maintains food quality, prevents spoilage, and safeguards nutritional content.

Classifying Food for Storage

To store food properly, we must first classify it based on its shelf life:

Perishable Foods: Foods that spoil very quickly (within a few days) due to high moisture content. Examples include milk, fresh meat, fish, fresh vegetables, and ripe fruits.
Semi-Perishable Foods: Foods that can last for a few weeks to a couple of months if kept under the right conditions. Examples include onions, potatoes, ginger, and garlic.

Dry Storage:
- This is the storage of dry, non-perishable foods in a cool, well-ventilated pantry, cupboard, or storeroom. Foods should be kept in airtight containers to protect them from moisture, insects, rodents, and dust.
Traditional Preservation and Storage Methods:
- Drying: Removing moisture from food by exposing it to sun, wind, or mechanical dryers. Microorganisms cannot grow without water. Used for stockfish, dried peppers, and crayfish.
- Smoking: Exposing food to smoke from burning wood. The heat dries the food while the chemical compounds in smoke act as preservatives. Used commonly for fish and meat.
- Salting: Covering food in dry salt or soaking it in a strong salt solution (brine). Salt draws moisture out of bacterial cells, killing them. Used for preserving fish and beef.
- Canning and Bottling: Sealing food in airtight cans or jars and then heating them to high temperatures to destroy all microorganisms.

Imagine a shopper, Chidi, who is looking for canned tomato paste in a local grocery shop. He finds a can of tomato paste that is heavily discounted because it has a deep dent on the side. Chidi thinks he is saving money. However, the dent may have cracked the inner protective enamel of the can, exposing the food to metal and allowing the deadly bacterium Clostridium botulinum to multiply. If Chidi buys and consumes this food, he faces a high risk of life-threatening food poisoning. This illustrates why avoiding damaged packaging is a vital purchasing rule.

Example 2: Storing Beans to Avoid Weevils

Amara purchases a large bag of dry beans. If she leaves the beans in the open, humid air in a regular nylon bag, weevil eggs inside the beans will hatch, and moisture will cause mold to grow, ruining the entire batch. To store her non-perishable food safely, Amara dries the beans thoroughly in the sun, places them in clean, dry plastic containers with tight-fitting lids, and adds some dried pepper or neem leaves to naturally repel pests. This shows the effectiveness of proper dry storage.
